L’OSTERIA ENOTECA CUNTITT

Ticino’s Secret Address for Krug Lovers

Words | Thomas Hauer

There are restaurants that are desperate to stand out, and then there are places like L’Osteria Enoteca Cuntitt, which reveal themselves only to those willing to seek. Hidden in Castel San Pietro, a small, remote village above Mendrisio, it is hardly the natural setting for one of the most compelling restaurants in the region. And yet that very remoteness is part of its fascination. Cuntitt does not simply serve dinner; it offers the sensation of having discovered a delicious secret.

At the heart of it all is Federico Palladino, chef, owner, and animating spirit of the house. The meticulously curated wine cellar and service are overseen by his partner, sommelier Nicole Selva. Palladino belongs to that rare category of modern restaurateur whose personality is compelling without being overwhelming. There is ambition in him, certainly, and a restless creative charge, but it is balanced by warmth, curiosity, and generosity. Yes, Palladino’s cooking has polish and confidence, but it never lapses into froideur; instead, you will find soul in it, and a heartwarming sense of hospitality that feels profoundly Italian, even on Swiss soil. One senses a man who cares deeply about excellence, yet is far more interested in welcoming guests than intimidating them.

For him, the greatest compliment therefore is not applause, but those guests who come back repeatedly.

It makes intuitive sense, that in 2025, the prestigious Champagne house Krug has drawn Palladino and Osteria Enoteca Cuntitt into its rarefied circle of Krug Ambassadors. Krug has always stood for individuality, depth, and the patient pursuit of complexity, and Palladino’s culinary art moves along much the same lines. He is not a chef of empty decorative cleverness but builds flavour with intent and layers ideas gracefully. Palladino understands that elegance is most persuasive when it feels effortless. For Krug lovers, Cuntitt therefore carries a very particular allure: it is not merely another fine-dining address with a famous label on the list, but a place with a natural and deeply personal spirit.

When we visit the small restaurant, housed in a wing of the eponymous, lovingly restored Masseria Cuntitt on a quiet Wednesday evening, we are initially surprised to find ourselves the only guests. However, we soon learn that Palladino and Selva had only returned the day before from a short break, and had opened the restaurant this evening especially for us. For the chef and his wife, a matter of honour and precisely the kind of luxury that transcends the purely material dimension.

As an aperitif and for the first few courses, we enjoy – after all, we were guests at a Krug Ambassade – a bottle of the recently released Krug Vintage 2013. The Maison has aptly labeled it ‘Exalted Citrus’, because this elixir, carried by a vibrant acidity and first hints of secondary aromas, practically dances across the palate, proving to be a perfect partner for Palladino’s creations. Particularly impressive was a multidimensional variation on carrots with delicate wasabi ice cream, as well as spaghettoni served with a creamy lime sauce and topped with raw slices of red-spotted bream. Both dishes that were created specifically by Palladino to pair perfectly with a glass of Krug Champagne.

What makes Palladino especially compelling, however, is the way his vision remains firmly anchored in the land surrounding him. In many restaurants, the vocabulary of terroir can feel rehearsed, as though locality were a fashionable garnish sprinkled over an otherwise generic luxury experience. At Cuntitt, it is the opposite. The landscape is not a backdrop; it is the foundation of the cuisine. The surrounding hills, the vineyards, the seasonal pulse of the region, and the network of nearby producers all feed directly into the identity of the kitchen. Palladino cooks with a fine-dining sensibility, certainly, but the emotional centre of the food lies in its local roots. Regional products are not there as a selling point; they are there because in his world, it is the only honest way to begin.

That fidelity to place gives the restaurant its unique connection to the textures, aromas, and nostalgia tied to the area. Palladino accomplishes the art of creating dishes that manage to be sophisticated and refined without being severed from the earth they come from. He understands that true luxury is not extravagance for its own sake, but the clarity of knowing where an ingredient comes from, trusting the people who grow it, and conveying what comes from the landscape into something precise and memorable on the plate.

And so Osteria Enoteca Cuntitt becomes more than the sum of its accolades. It is a Michelin-starred restaurant, yes, but that is only part of the story. What lingers is the atmosphere of beautifully cultivated secrecy. The allure that one of Krug’s most intriguing outposts has taken root in almost improbably remote surroundings. For those who admire great Champagne, that is part of the seduction. Cuntitt feels like a secret worth travelling for – a hidden address at the end of the world, where Federico Palladino and Nicole Selva have turned remoteness into distinction, and the local landscape into a quietly unforgettable form of luxury.

KRUG AMBASSADES – WHERE CHAMPAGNE COMES TO LIFE

Krug Ambassades are far more than mere venues: they constitute an exclusive global network of acclaimed chefs, sommeliers, and restaurateurs bound by their shared passion for the wines of one of the world’s most revered Champagne Houses.

Handpicked by the Maison to embody its culinary philosophy, the Krug Ambassade programme is rooted in the conviction that great Champagne should be enjoyed not merely as a luxurious aperitif, but as a genuine gastronomic companion – one capable of elevating fine cuisine to new heights. For chefs and restaurateurs, inclusion is both a mark of distinction and an invitation to creative exchange with the House; for guests, it signals a destination where food and Champagne pairing is treated as an art form.

At the heart of the initiative is the annual Krug in the Kitchen programme, in which participating Ambassades around the world create dishes inspired by a single ingredient. This year, the spotlight falls on the carrot – a deliberately humble choice designed to illustrate how imagination, technique, and craftsmanship can transform even the most modest ingredient into something extraordinary.
